2 Envelopes unflavored gelatin
1/2c;water, cold
1/4cHoney
12ozCan unsweetened peach or
  Apricot nectar
2tsLemon juice
3 Egg whites

Combine gelatin and water in a saucepan. Wait one minute. Cook over low heat, stirring constantly, until gelatin dissolves. Remove from heat. Stir in honey, peach nectar and lemon juice. Chill, stirring occasionally until mixture is syrupy-thick. Add egg whites to gelatin. Beat at high speed with electric mixer until light and fluffy. Chill until firm.
